It wa whilst travelling through oaxaca in Mexico that I watched moles being prepared in huge cazuelas. enveloped by the the smells of roasting chillies, I ate, succulent grilled meats, delicious roasted vegetables all swimming in this most sacred of sauces that would bring the entire community together in a joyous celebration of flavour and life. this is what inspired chorrito sauce
